Strawberry Short Cake

For the Cake

5 tablespoons unsalted butter, melted, plus more for the pan
1 1/3 cups all-purpose flour, plus more for dusting
1 1/4 cups granulated sugar
1 1/4 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons vanilla bean paste (or seeds from 1/2 vanilla bean)
2 large eggs, at room temperature, beaten
3/4 cup whole milk, at room temperature
1/2 teaspoon finely grated lemon zest

1 teaspoon baking soda
1 teaspoon salt

Ingredients

Cake:

2 cups granulated sugar
1 1/2 cups vegetable oil
4 fresh whole eggs
2 cups pastry flour
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3 cups raw finely ground carrots
4 ounces finely chopped walnuts

Frosting:
1 1/2 pounds powdered sugar
12 ounces room temperature cream cheese
1 tablespoon vanilla extract
2 ounces room temperature margarine

Preheat oven to 300 degrees F.

3⁄4 cup buttermilk
1 teaspoon vanilla
2 cups powdered sugar

Directions

Heat oven to 350 degrees. Grease and flour a large bundt pan.
